Cerrojo Cabernet Franc 2018
UCO VALLEY. Wine that combines terroirs. Microvinificaciones of Vistaflores and Chacayes y Pampa el Cepillo
Made with grapes from different vineyards in the Uco Valley, located between 1050 and 1300 meters above sea level, growing on clay-loam soils with sandy veins in some areas and calcareous rock on the surface in some estates.
Traditional and drip irrigation, combined in some cases, and plowing in the soil.
Harvested by hand in 25 kg boxes in March, fermentation in cement tanks.
Aging of the terroir blend in French oak barrels for 16 months.
Coarse filtration prior to bottling.
Stored in bottle for 12 months before going to market.
SUGGESTED PAIRING:
♦ Flame-braised beef ribs, sweetbreads with green beans, spanish tortilla (potato omelet) with black pudding and red peppers.
♦ Hard cheeses such as Parmesan, Pepato, Sardo and Provolone.
